Ingredients:
- 2 cups steamed rice
- 1/4 cup *French Dressing, preferably made with tarragon vinegar and olive oil (recipe to follow)
- 1/4 cup coarsely chopped green pepper
- 1/4 cup finely chopped celery
- 10 black olives, pitted and halved
The rice must be dry and fluffy for the success of this salad. While the rice is warm, mix in the dressing. Place rice mixture in a bowl lined with lettuce. Garnish with peeled, quartered tomatoes.
* French Dressing (makes about 1/2 cup)
Ingredients:
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 Tbsp olive oil
- 1 Tbsp vinegar or lemon juice
- 1/4 tsp dry mustard (opt)
- pinch of nutmeg
Beat these ingredients well with a wire wisk or fork until they are smooth.
Add and beat well:
- 2 Tbsp olive oil
Add and beat well again:
- 3 Tbsp olive oil
- 1 Tbsp vinegar or lemon juice
Peel and add:
- 1 garlic clove
Place the dressing in a jar and put in a cold place until ready to use. Shake well before using.
