Ingredients:
- 1 ripe diced avocado
- ½ cup diced celery
- 1 grated carrot
- ½ cup diced green pepper
- 1/3 cup diced cold potato
- ½ cup cold baked beans
- 2 hard cooked eggs, diced
- 2 Tbsp mayonnaise
- ½ tsp lemon juice
1. Combine first 7 ingredients
2. Whisk mayonnaise & lemon juice in separate bowl.
3. Gently toss all ingredients.
Serve on bed of lettuce with tomatoes.
