Spanish Sabores | Feasting At Home | Tastes Better From Scratch
INGREDIENTS:
- 2 pounds waxy potatoes, sliced thin
- Salt to taste
- 1 lg white onion, sliced thin
- 8 eggs, room temperature
- Extra virgin olive oil
DIRECTIONS:
- Rinse potatoes under cold water, pat dry & sprinkle with salt
- Heat oil in pan
- Sauté onion in oil until caramelized
- Fry potato slices in same pan until crisp
- Add sautéed onion & potato to egg mixture and let stand about 15 min
Use as directed in recipes: skillet omelette, baked casserole etc.

-Kosher salt, rinse before sautéing
-Saute in butter Ghee
-Add Ham bits to egg mixture
