Ingredients:
- 2 cups all purpose flour (or mix of white & whole wheat)
- 3/4 cup white (or raw cane) granulated sugar
- 1/2 cup dark brown sugar, packed
- 3/4 tsp baking soda
- 3/4 tsp salt
- 3/4 tsp cinnamon
- 1/2 cup plain soy milk or almond milk
- 1 tsp apple cider vinegar
- 2 cups mashed banana (about 4 large, very ripe bananas)
- 1/4 cup canola oil
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- Chopped walnuts (optional)
Preheat oven to 350 degrees.
*Lightly oil a 9 X 5 loaf pan & set aside.
1. In medium-sized mixing bowl sift together Flour, Sugars, Baking Soda, Salt & Cinnamon.
2. In large mixing bowl whisk together Soy or Almond Milk & Cider Vinegar, let stand for two minutes.
3. Add Mashed Banana, Canola Oil, Maple Syrup & Vanilla Extract. Whisk until well combined.
4. Add the dry ingredients to the wet, mixing until just combined. Do not overmix.
5. Fold in the Walnuts if using.
Pour the batter into prepared loaf pan.
Bake for about 1 hour, or until toothpick inserted into center emerges clean.
Allow bread to cool on wire cooling rack for 20 minutes before serving.
