Ingredients:
- 1 Tbsp olive oil
- 2 Tbsp minced jalapeno pepper, divided
- 1 tsp chili powder
- ¾ cup uncooked orzo pasta
- 1 cup frozen mixed vegetables
- 1 can (16 oz) black beans, rinsed & drained
- 2 thin slices red onion
- ¼ cup chopped cilantro
- ¼ cup fresh lime juice
- ¼ cup fresh lemon juice
- 4 cups washed & torn spinach leaves
- 2 Tbsp crumbled blue cheese (opt)
1. Combine oil, 1 Tbsp jalapeno and chili powder in medium bowl.
2. Bring 6 cups water and remaining 1 Tbsp jalapeno to a boil in large saucepan.
3. Add orzo, cook 10 – 12 min or until tender, drain.
4. Rinse in cold water, drain.
5. Place frozen vegetables in small microwavable container, cover & microwave on high for 3 min or until hot. Cover and let stand for 5 min.
6. Add orzo, vegetables, black beans, onion, cilantro, lime juice and lemon juice to oil mixture in bowl.
Divide spinach evenly among serving plates. Top with orzo & bean mixture. Sprinkle with blue cheese and garnish with fresh cilantro, if desired.
