Ingredients:
- 3 eggs
- 1 & 2/3 cups granulated sugar
- 3/4 to 1 cup vegetable oil
- 2 & 1/4 cups raw zucchini
- 3 tsp vanilla extract
- 3 cups flour – 1 cup whole wheat & 2 cup white
- 1 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
Preheat oven to 350 degrees.
Beat the eggs until light and foamy.
Add the sugar, oil, zucchini & vanilla and mix lightly but well.
Combine the flour, salt, soda & baking powder and add to the egg-zucchini mixture.
Stir until well blended.
Pour into two 9x5x3-inch loaf pans.
Bake in preheated 350 degree oven for 1 hour.
Cool on rack.
