INGREDIENTS:
- 1 16oz box of orzo
- 1/4-1/2 cup rice vinegar, based on preference
- 1/2 cup kalamata olives, chopped
- 1/2 cup sun dried tomatoes (with the oil), choppped
- 1/4-1/2 cup pepperoncini peppers, chopped
- 1 can drained & rinsed chickpeas (can soak in pepperoncini juice while pasta is cooking)
- 1 bell pepper, whichever color you prefer, finely diced
- 1/2 red onion, finely diced
- 1-2 handful of spinach, chopped
- 1/4 cup fresh basil, chopped (opt)
Season with salt, pepper & garlic powder.
Top with Feta or Goat cheese.
