INGREDIENTS:
- 1 cup crushed tomatoes
- 1 can coconut milk (full fat)
- 2 cups chickpeas
- 1 cup spinach
- 2 cups cauliflower florets
- 1 red bell pepper (chopped)
- 1 med onion (chopped)
- 2 cloves garlic (minced)
- 2 tsp curry powder
- 1 & 1/2 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1/2 tsp pepper
METHOD:
- Sauté onion & garlic for a few minutes.
- Add the rest of ingredients, except the spinach & lime juice.
- Stir and cook over medium heat, covered for about 25 minutes or until veggies are tender.
- Stir in spinach and cook for another 5 minutes.
- Squeeze in lime juice.
Serve with brown rice.
