Ingredients:
- 4-5 medium sweet potato or yams
- 1/3 cup milk or orange juice
- 1/4 cup butter or margarine
- 1 egg, slightly beaten
- 1/4 tsp cinnamon
- 1 tsp salt
- marshmallows
Pare potatoes and cut into large chunks. Cook until tender (about 20 minutes).
Mash potatoes well and add butter, egg, salt, cinnamon and orange juice.
Beat until creamy, adding more juice if needed.
Place into baking dish and lightly press marshmallows into top.
Bake uncovered at 350 degrees for 30 minutes or until marshmallows are golden brown.
