Crust:
- 3-4 red potatoes, skinned & sliced
- 2 Tbsp olive oil
- 1 Tbsp garlic salt
- 1 tsp pepper
Preheat oven to 425 degrees. Grease cast iron skillet or pie pan, set aside. Place sliced potatoes in mixing bowl, add olive oil, garlic salt & pepper and mix. Layer on pan like a crust, it’s ok to overlap layers, cover large gaps.
Place in oven and bake for 25 min, or until lightly browned.
Filling:
- 4 eggs
- 1/2 cup of half & half
- 1 cup shredded apple wood smoked gouda cheese
- 2 cups diced sausage (or ham)
- 1/4 cup diced onions (or shallots)
- Salt & pepper
Combine ingredients in mixing bowl. Don’t use too much salt in the filling since there is plenty on the crust. When potatoes are finished, pull out of oven. Pour egg mixture over potatoes, some of it might seep on to the pan. This is fine, it will still bake nicely.
Lower oven temp to 350 degrees, bake around 20 min or until set. Serve warm.
Notes:
Came out a little soupy first time.
Add or substitute broccoli &/or mushrooms for meat? Maybe add Anaheim chili?
Top with Feta cheese.
1 & 1/2 batch for med cast iron skillet.
