Ingredients:
- 2 & 1/2 lbs summer yellow squash, chopped
- 1 med onion, chopped
- 1 can condensed (reduced sodium) Cream of Chicken soup
- 1 cup sour cream
- 1/2 pkg (8oz size) *cornbread stuffing mix
Simmer or steam squash & onion in water until very tender; drain and mash.
Stir in remaining ingredients, mixing well.
Spoon into greased 2qt casserole dish.
Bake, covered, at 350 degrees until hot, about 30 min.
Makes 8 servings.
