INGREDIENTS:
- 3/4 cup dry black beans, soaked overnight
Drain & rinse. Put in crockpot and cover with water.
ADD:
- Wedge of onion
- 2-3 whole garlic cloves
- Couple bay leaves
- Pinch of cumin seeds
- Fresh jalapeño, cut in half with seeds removed
- Kombu (to soften skins)
- Rotel with jalapeño or green chili (few spoonfuls, add towards end)
When beans are done add salt.
OPTIONAL:
- Lime juice
- Orange zest
- Cilantro
