Ingredients:
- 1/4 cup butter, margarine or salad oil
- 1 cup chopped onions
- 1 diced green pepper
- 2 tsp salt (opt)
- dash of pepper
- 1 bay leaf
- 2 whole cloves
- 1 #2 can of tomatoes (or 2 & 1/2 cups tomato juice)
- 1 tsp sugar
- 3 Tbsp flour
- 6 Tbsp water
Sauté onions until tender. Add rest of ingredients, except flour and water. Simmer covered 30 min. Mix flour with water until smooth, stir into tomato sauce. Cook until thickened. Remove bay leaf and cloves.
*For shrimp creole, add cooked shrimp to sauce and pour over rice.
