Ingredients:
- 1/4 cup olive oil
- 1 med onion, chopped
- 2 green peppers, chopped
- 1 cut chicken
- 2 bay leaves
- 1 clove garlic, mashed
- 1/2 tsp oregano
- Salt & pepper
- 2 cups canned tomatoes
- 1/2 cup tomato paste
- 1/2 cup chicken stock
Saute onion & peppers lightly in oil. Remove and reserve.
Brown chicken, remove and set aside.
Add all other ingredients and bring to a boil.
Return browned chicken, onion & peppers to pan.
Reduce heat to simmer.
Cover and cook until tender, about 1 & 1/2 hours.
