Ingredients:
- 1 cup whole wheat flour
- 1 tsp ground cinnamon
- 1/2tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup margarine or butter
- 1/2 cup granulated sugar*
- 1/2 cup packed brown sugar
- 1 whole egg
- 1 egg white
- 1 tsp vanilla extract
- 2 cups old fashioned or rolled oats
- 1/2 cup raisins**
- 1/2 cup dried cranberries
- cooking spray
Preheat oven to 350 degrees
1. Combine flour, cinnamon, baking soda and nutmeg in bowl and set aside.
2. In large bowl, combine margarine, sugars, egg, egg white & vanilla and beat with an electric mixer until well mixed.
3. Add flour mixture and beat until all the flour is combined.
4. Stir in oats, raisins and cranberries with a mixing spoon until incorporated.
Drop the dough, one tsp at a time, onto a baking sheet coated with cooking spray. Bake for 10 to 15 min or until just browned. Remove from the sheet to cool.
Makes about 4 dozen (1/2 oz) cookies
*Reduce granulated sugar
**Substitute nuts for rasins
