Ingredients:
- 20 pork chops or 2 each (they cook down) or chicken (however many pieces ya’ll eat per person, times number of people)
- 1 Tbsp cumin
- 1 Tbsp coriander
- 2 Tbsp madras or hot curry powder
- 3 Tbsp crushed red pepper
- 1/2 Tbsp cinnamon
- 1 Tbsp salt
- 1 Tbsp black pepper
- 2 crushed bay leaves
- 1/2 cup vegetable oil
- 2 lemons [more]
Mix dry ingredients together with 1/2 cup oil and juice of 2 lemons, mix well and rub on pork chops or chicken pieces.
Saute pork chops or chicken in covered pot for 5 minutes each side, over medium low heat.
Add the following ingredients:
- 6 cloves garlic [more]
- 3 bell peppers, chopped [more]
- 3 onions chopped or sliced [more]
- 1 head cabbage, chopped or sliced
- 2 bags carrots sliced, not too thin [omit]
- 5 large potatoes, peeled and cut in half
- 5 zucchini, sliced crosswise [more]
- 1 (#10 or larger) can whole tomatoes [large]
- either 1 medium sized can chopped jalapeno peppers, or 3 fresh jalapeno peppers, chopped
- 3 cups water
Bring to a boil and simmer/cook covered on medium low for at least 1 hour, stirring occasionally and make sure there is always liquid in pot.
