Ingredients:
- ½ onion (or shallots)
- ¼ cup butter
- 1 cup orzo
- ¼ cup dry vermouth
- ½ tsp salt
- 1 ½ cup chicken broth or bouillon
1. Sauté onion in butter until soft.
2. Stir in orzo and heat 1 min.
3. Add vermouth, salt & chicken broth or bouillon.
4. Cook over med heat until tender. You may need more broth.
Add ¼ cup grated parmesan, if desired.
Add frozen peas (opt)
