Ingredients:
- 2 bananas, slightly over ripe
- 2 large eggs, slightly beaten
- 2 cups flour (1 cup white/1 cup whole wheat
- 1 cup sugar
- 1/2 cup butter, softened
- 1/2 cup walnuts, chopped
- 1/4 cup hot water
- 1 tsp baking soda
- 1/2 tsp salt
Preheat oven to 325F
Peel and mash bananas. You should end up with approximately 1 cup mashed.
In a mixing bowl, cream together butter and sugar.
Fold in the eggs and mashed bananas, blending until smooth.
Sift the flour, salt and soda into a bowl and mix in the whole wheat flour.
Fold the dry ingredients into the banana mixture, adding the water as the mixture becomes dry.
Fold in the nuts, ensuring that they are evenly spread throughout the banana bread mixture.
Lightly grease a 9x5x3 inch loaf pan and spoon in the banana bread mixture.
Bake approximately 70 min, or until done.
