Preheat oven to 350 degrees.
Ingredients:
- 3 to 5 cups diced fresh bread or 3 &1/2 cups stale bread
Cut bread into slices and trim away crusts. It should be measured lightly, not packed. Soak for 15 minutes:

- 3 cups warm milk or 2 cups milk & 1 cup fruit juice
- 1/4 tsp salt
Combine and beat well:
- 3 egg yolks
- 1/3 to 1/2 cup sugar
- 1 tsp vanilla
- (1/2 tsp nutmeg, opt)
Pour these ingredients over the soaked bread.
Stir lightly with a fork until well blended.

Beat until stiff, but not dry:
- 2 to 3 egg whites
Gently fold stiffly beaten egg whites into pudding.
Bake the pudding in a baking dish set in a pan of hot water for about 45 minutes. Cool.
