Greek yogurt sauce ingredients:
- 2 cups plain full fat yogurt
- 2 tsp creamed very fresh garlic
- 1 tsp sea salt
- 1 cucumbers – peeled, seeded & grated on large holes of grater
- ½ tsp freshly ground black pepper
- 2 tsp olive oil
- Fresh mint leaves, for garnish
1. Drain yogurt for 1 hour in cheese cloth lined strainer to remove water.
2. In bowl, combine yogurt, garlic & ½ tsp salt.
3. Sprinkle remaining ½ tsp salt over grated cucumber and drain for 10 – 15 min.
4. Add drained cucumber to yogurt, along with pepper, and mix well.
5. Cover and refrigerate until chilled, about 1 hour.
6. Drizzle with olive oil and garnish with mint leaves.
Serve with pita chips or grilled fish.
Yield: 2 ½ cups
