Ingredients:
- 2 lbs red-skinned potatoes, peeled & cut into chunks
- 1 tsp salt
- 2 hard boiled eggs, peeled & chopped
- 1 cup fresh or frozen peas, cooked & drained
- 1/2 cup finely chopped red onion
- 2/3 cup to 1 cup mayonnaise
- 1 Tbsp sour cream (opt)
- 2 to 3 tsp prepared mustard, or to taste
- Salt & freshly ground black pepper, to taste
1. Put potatoes in saucepan & cover with water, add 1 tsp salt.
2. Bring to boil, cover and cook 15 to 20 min.
3. Drain and transfer to a bowl.
4. Add chopped eggs, peas & onion.
5. Cover & refrigerate until chilled.
6. Combine mayonnaise, sour cream & mustard.
7. Gently stir into potato mixture until blended.
Add more mayonnaise, if desired. Add salt to taste.
