INGREDIENTS:
- 1 onion
- 3 cloves garlic, minced
- 1 celery stalk, diced
- 1 carrot, diced
- 3 potatoes, diced (any kind)
- 2 cups chard or spinach, chopped
- 2 cans black eyed peas, drained
- 4 cups veg broth
- 1 can (14 oz) fire roasted tomatoes
- 1 Tbsp smoked paprika
- 1/2 tsp thyme
- 1/2 tsp pink salt
- pepper to taste
DIRECTIONS:
- Sauce the onion and garlic for a few minutes, then add in the celery and carrots.
- Add in everything else except chard. Simmer about 30-45 minutes until the potatoes are done.
- Add in chard or spinach.
Ready to serve!
