INGREDIENTS:
- 4-6 large tomatoes – peeled, seeded & chopped
- 1/2 cup chopped white onion
- 1/2 to 1 cup chopped green/red pepper
- 1/2 to 1 cup (about 2 stalks) chopped celery
- 1/2 to 1 cup cucumber (about 1/2 hot-house)
- 2 cups fresh tomato juice (4-6 large tomatoes, juiced)
- 1-2 Tbsp chopped fresh parsley
- 1 minced garlic clove
- 1 Tbsp olive oil
- 1/4 cup (or less) red-wine vinegar
- Salt & pepper
Mix ingredients & blend slightly in blender.
Chill in Fridge.
