Recipe combined with “Pho Beef Soup” recipe: Pho Beef Soup
INGREDIENTS:
- 1 Tbsp OIL
- 2 Thick Slices Beef Shank (large marrow bones)
- 2 lbs Beef Oxtail, cut into pieces
- 1 (6 inch) piece of fresh ginger
- 6 whole star anise
- 1 tsp fennel seed
- 1 tsp whole coriander seeds
- 2 whole cloves
- 1 cinnamon stick
- 1 cardamon pod
- 3 qt water
- 1 onion, halved
- 6 cloves garlic
- 2 Tbsp white sugar (or lump sugar)
- 1 bay leaf
- 2 Tbsp fish sauce
- 1 Tbsp sou sauce
- 1 (16 oz) pkg fresh rice noodles
- 1 cup fresh bean spouts, or to taste
- 1 fresh jalapeno pepper, sliced into rings, or to taste
1. Heat oil in large pot over medium high heat.
2. Cook beef shank, oxtail pieces & ginger in hot oil, turning occasionally until browned, 3 to 5 min per side.
3. Add star anise, fennel seed, coriander seed, cloves, cinnamon stick & cardamon pod to the pot & saute until fragrant, about 30 seconds.
4. Stir water, onion, garlic, sugar & bay leaf into beef mixture; bring to boil, reduce heat to low & simmer until broth is flavorful & meat is falling off bone, 5 to 6 hours.
5. Remove meat & reserve.
6. Strain broth into a pot; discard strained spices & vegetables.
7. Chop beef shank meat & add to broth in pot.
8. Stir in fish sauce & soy sauce.
9. Bring broth to a simmer & reduce heat to low to keep warm.
10. Place rice noodles in a large bowl & cover with hot water until softened, about 5 min.
11. Drain & rinse in cold water.
Place a handful of bean sprouts in the bottom of a large soup bowl. Top wtih a large handful of prepared rice noodles & drop a few jalapeno slices over noodles. Ladle beef broth into bowl to cover noodles.
