Italian Bean Trio Soup
INGREDIENTS: (Original recipe)
- 2 Tbsp olive oil
- 1 onion, finely diced
- 1 carrot, finely sliced
- 1 stalk celery, finely sliced
- 2 cloves garlic, minced
- 1 (14 oz) can organic diced tomatoes
- 3 & 1/2 cups water or vegetable broth
- 1 bay leaf
- 1 cup TruRoots Sprouted Bean Trio **
- 1/4 cup fresh parsley, minced
- salt & pepper to taste
Heat the oil in large saucepan.
Add onion, carrot & celery. Cook partially covered until soft, about 10 min.
Add garlic and cook for 1 to 2 min, stirring occasionally.
Stir in tomatoes & cook for 5 mi.
Stir in water & bay leaf and bring to a boil.
Add the Bean Trio.
Reduce heat and simmer 5 min, until the lentils are tender.
Cover & let stand for 2 min.
Stir in parsley and salt & pepper before serving.
Makes 4 to 6 servings.
