- 1 Flank Steak – 2 to 2 1/2 lbs, trimmed of all fat & membrane and scored on both sides to prevent curling.
Marinade:
- 3 Tbsp minced scallions or shallots
- 1 & 1/2 Tbsp soy sauce
- 2 Tbsp olive oil
- 1/2 tsp thyme or Italian Seasoning
- 1 clove garlic, finely chopped
- 1 Tbsp lemon juice
- few drops Tabasco sauce
Mix marinade ingredients in a bowl. Lay flank steak flat on bottom of broiling pan and spread on half the marinade. Turn steak and spread with rest of marinade. Cover with waxed paper and leave for at least 20 min, or refrigerate for several hours or overnight.
Broil close to flame for 3 minutes each side. Serve with pan juices.
