

{"id":980,"date":"2012-10-04T18:48:31","date_gmt":"2012-10-04T18:48:31","guid":{"rendered":"http:\/\/maggfarm.com\/?page_id=980"},"modified":"2015-07-17T04:11:44","modified_gmt":"2015-07-17T04:11:44","slug":"creole-turtle-or-oxtail-soup","status":"publish","type":"page","link":"http:\/\/maggfarm.com\/?page_id=980","title":{"rendered":"(Andree&#8217;s) Creole Turtle Soup ~Oxtail~"},"content":{"rendered":"<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='http:\/\/maggfarm.com\/?page_id=980&printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;<img src=\"http:\/\/maggfarm.com\/wp-content\/plugins\/wordpress-print-this-section\/images\/print2.gif\" \/> &nbsp; Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\"><br \/>\nMakes 4 servings<\/p>\n<ul>\n<li>2 lbs boneless turtle (or oxtail) meat<\/li>\n<li>3 cups water<\/li>\n<li>1 medium onion, quartered<\/li>\n<li>1 celery stalk, coarsely chopped<\/li>\n<li>1\/2 large bell pepper, coarsely chopped<\/li>\n<li>2 bay leaves<\/li>\n<li>1\/4 tsp cracked black pepper<\/li>\n<li>1 tsp minced garlic<\/li>\n<\/ul>\n<p>Combine above ingredients in a 4-qt pot.<br \/>\nBring to boil, lower heat to medium and simmer for 1 hour &amp; 15 minutes.<br \/>\nDrain stock through strainer, reserving stock in bowl.<br \/>\nAllow meat to cool, then separate from rest of ingredients, discarding everything but the meat.<br \/>\nCoarse chop the meat and set aside.<\/p>\n<ul>\n<li>2 Tbsp butter<\/li>\n<li>1 cup chopped onion<\/li>\n<li>1\/2 cup chopped bell pepper<\/li>\n<li>1\/2 cup chopped celery<\/li>\n<li>2 Tbsp minced garlic<\/li>\n<li>1 tsp dried thyme<\/li>\n<li>2 Tbsp tomato paste<\/li>\n<li>1 14 oz can diced tomatoes<\/li>\n<\/ul>\n<p>Heat butter in pot, add onions, celery, bell pepper and garlic.<br \/>\nSaute for 10 minutes over medium heat.<br \/>\nAdd thyme, tomato paste and diced tomatoes and continue to cook until water from tomatoes evaporates.<\/p>\n<ul>\n<li>1 8oz can tomato sauce<\/li>\n<li>5 cups reserved stock<\/li>\n<li>1\/2 cup red wine<\/li>\n<li>1\/4 cup dry sherry<\/li>\n<li>1 tsp salt<\/li>\n<li>1 tsp hot sauce<\/li>\n<li>1\/4 tsp cracked black pepper<\/li>\n<li>2 bay leaves<\/li>\n<li>2 Tbsp Worcestershire sauce<\/li>\n<\/ul>\n<p>Add above ingredients.<br \/>\nCover pot and simmer for 30 min over medium heat.<\/p>\n<ul>\n<li>2 Tbsp butter<\/li>\n<li>3 Tbs flour<\/li>\n<li>1\/4 cup minced parsley<\/li>\n<li>1\/4 cup minced green onions<\/li>\n<li>2 boiled eggs, peeled &amp; chopped<\/li>\n<li>4 Tbsp dry sherry<\/li>\n<\/ul>\n<p>In small saute pan heat butter over medium heat until melted.
