

{"id":963,"date":"2012-10-02T23:47:52","date_gmt":"2012-10-02T23:47:52","guid":{"rendered":"http:\/\/maggfarm.com\/?page_id=963"},"modified":"2017-12-23T05:20:35","modified_gmt":"2017-12-23T05:20:35","slug":"roasted-kabocha-squash","status":"publish","type":"page","link":"http:\/\/maggfarm.com\/?page_id=963","title":{"rendered":"Kabocha Squash w\/ Green Beans"},"content":{"rendered":"<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='http:\/\/maggfarm.com\/?page_id=963&printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;<img src=\"http:\/\/maggfarm.com\/wp-content\/plugins\/wordpress-print-this-section\/images\/print2.gif\" \/> &nbsp; Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\"><br \/>\nIngredients:<\/p>\n<ul>\n<li>1 Kabocha squash (3-4 lbs)<\/li>\n<li>1 Tbsp olive oil<\/li>\n<li>\u00a0Salt &amp; freshly ground black pepper, to taste<\/li>\n<li>1 slice thick bacon, diced (or two thin slices)<\/li>\n<li>1 red onion, chopped<\/li>\n<li>1\/2 lb green beans, washed &amp; stems removed<\/li>\n<li>1\/4 cup (marcona) almonds, roughly chopped<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<p>Pre-heat oven to 375 degrees. Rinse squash &amp; pat dry. Cut around stem (about a\u00a0five inch opening) remove lid and scoop out pulp &amp; seeds. Rub inside of squash with olive oil\u00a0and season with salt &amp; pepper. Place on baking sheet, replace the lid and roast until tender,\u00a0about 45 minutes to 1 hour depending on size.<\/p>\n<p>Steam green beans until tender, about 3 minutes. Remove &amp; shock in cold water. Drain and cut into 2 inch pieces.<\/p>\n<p>Meanwhile, heat a skillet over medium heat, add diced bacon and render over low heat until bacon is browned. Add onions and cook over low heat, stirring constantly until caramelized (about 10 minutes).<\/p>\n<p>Just before serving, add the green beans to the onions and saute until beans are warmed through. Correct the seasoning.<\/p>\n<p>Transfer warm squash to cutting board and cut down, but not through the base, into 6 wedges; transfer to a serving bowl.
