

{"id":789,"date":"2012-03-13T23:42:17","date_gmt":"2012-03-13T23:42:17","guid":{"rendered":"http:\/\/maggfarm.com\/?page_id=789"},"modified":"2024-06-09T22:36:58","modified_gmt":"2024-06-09T22:36:58","slug":"beef-stew-gaston-j-of-c","status":"publish","type":"page","link":"http:\/\/maggfarm.com\/?page_id=789","title":{"rendered":"Gaston Beef Stew (J of C)"},"content":{"rendered":"<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='http:\/\/maggfarm.com\/?page_id=789&printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;<img src=\"http:\/\/maggfarm.com\/wp-content\/plugins\/wordpress-print-this-section\/images\/print2.gif\" \/> &nbsp; Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\"> Ingredients:<\/p>\n<ul>\n<li>1\/2 lb salt pork, cut into small pieces<\/li>\n<li>2 lbs stew beef, cut into pieces suitable for stewing<\/li>\n<li>Seasoned flour<\/li>\n<li>1 or 2 cloves of garlic, chopped<\/li>\n<li>1 lg onion, chopped<\/li>\n<li>1 cup canned tomato sauce<\/li>\n<li>1 cup bouillon<\/li>\n<li>12 peppercorns<\/li>\n<li>2 whole cloves<\/li>\n<li>1\/4 cup chopped parsley<\/li>\n<li>1\/3 bay leaf<\/li>\n<li>1\/4 cup dry sherry or dry white wine<\/li>\n<li>6 med potatoes, pared &amp; quartered<\/li>\n<li>6 carrots, pared &amp; quartered<\/li>\n<li>1 or 2 stalks celery, chopped<\/li>\n<\/ul>\n<ul>\n<li>Pinch of <u><b>Quebec Beef Spice<\/b><\/u> to taste.<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>1. Saute salt pork in large pan.<br \/>\n2. Brown beef in hot drippings over high heat. Pour off most of the accumulated fat.<br \/>\n3. Sprinkle meat with seasoned flour.<br \/>\n4. Combine and heat to boiling: garlic, onion, bouillon, tomato sauce, peppercorns, cloves, parsley &amp; bay leaf.<br \/>\n5. Place the meat in a heavy saucepan. Pour the heated ingredients over meat.<br \/>\n6. Simmer closely covered for about 2 to 3 hours.<br \/>\n7. During the last hour of cooking add sherry or wine.<br \/>\n8. Cook separately until nearly tender: potatoes, carrots&amp; celery.<br \/>\n9.
