

{"id":5197,"date":"2022-02-08T04:10:47","date_gmt":"2022-02-08T04:10:47","guid":{"rendered":"http:\/\/maggfarm.com\/?page_id=5197"},"modified":"2025-07-29T18:44:04","modified_gmt":"2025-07-29T18:44:04","slug":"eggplant-with-brown-sauce","status":"publish","type":"page","link":"http:\/\/maggfarm.com\/?page_id=5197","title":{"rendered":"Eggplant with Brown Sauce"},"content":{"rendered":"<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='http:\/\/maggfarm.com\/?page_id=5197&printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;<img src=\"http:\/\/maggfarm.com\/wp-content\/plugins\/wordpress-print-this-section\/images\/print2.gif\" \/> &nbsp; Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\"><br \/>\nFrom: <a href=\"https:\/\/lolakusinera.com\/eggplant-with-brown-sauce\">Lola Kusinera<\/a><\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>3 Tbsp canola or peanut oil<\/li>\n<li>1 lb Chinese or Japanese eggplant, cut into serving pieces<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>3 cloves garlic, chopped<\/li>\n<li>1 thumb size ginger, grated or minced<\/li>\n<li>5 pieces dried chili peppers, chopped<\/li>\n<li>3 pieces green onions, sliced thin<\/li>\n<\/ul>\n<p>FOR THE BROWN SAUCE:<\/p>\n<ul>\n<li>1\/4 cup soy sauce (or liquid aminos)<\/li>\n<li>1\/2 cup water<\/li>\n<li>1 tsp rice vinegar<\/li>\n<li>1 tsp sesame oil<\/li>\n<li>2 Tbsp white sugar, or to taste<\/li>\n<li>1\/4 tsp ground pepper<\/li>\n<li>1 tsp (Tbsp?) corn starstarch<\/li>\n<\/ul>\n<p>INSTRUCTIONS:<\/p>\n<ol>\n<li>Cut eggplant into serving pieces and soak in cold water. Remove eggplant from water and pat dry using a paper towel or a clean cloth few minutes before cooking.<\/li>\n<li>In a small bowl, combine soy sauce, water, rice vinegar, sesame oil, sugar, pepper and cornstarch. Whisk well to dilute the cornstarch and set aside.<\/li>\n<li>Using a wok or a skillet, heat over medium-high heat and add oil. Add sliced eggplant and stir fry until nicely brown for about 5 minutes while stirring occasionally. Remove eggplant and set aside.<\/li>\n<li> Using the same wok, add onion, garlic, ginger and dried chili peppers. Stir fry for about 2 minutes or until aromatic while continuously stirring.<\/li>\n<li>Give the sauce mixture a quick stir and pour into wok. Simmer over low heat while continuously stirring for about 30 seconds or until sauce starts to thicken.<\/li>\n<li>Add the fried eggplant back to the wok and toss gently to evenly coat the eggplant. If it seems dry, add a Tbsp or two of water. Garnish with sliced green onions and gently toss to combine.
