

{"id":4158,"date":"2020-08-22T03:21:30","date_gmt":"2020-08-22T03:21:30","guid":{"rendered":"http:\/\/maggfarm.com\/?page_id=4158"},"modified":"2020-08-23T19:46:19","modified_gmt":"2020-08-23T19:46:19","slug":"mexican-black-bean-corn-soup","status":"publish","type":"page","link":"http:\/\/maggfarm.com\/?page_id=4158","title":{"rendered":"Mexican Black Bean Corn Soup"},"content":{"rendered":"<div class=\"print-this-button-shell\">\n<button type=\"button\" class=\"print-this-button\" onClick=\"parent.location='http:\/\/maggfarm.com\/?page_id=4158&printthis=1&printsect=1'\">&nbsp;&nbsp;&nbsp;&nbsp;<img src=\"http:\/\/maggfarm.com\/wp-content\/plugins\/wordpress-print-this-section\/images\/print2.gif\" \/> &nbsp; Print This!&nbsp;&nbsp;&nbsp;&nbsp;<\/button>\n<\/div>\n<!-- Print This Section 1 Start -->\n<div class=\"print-this-content\"><br \/>\nFrom: <a href=\"https:\/\/www.forksoverknives.com\/recipes\/vegan-soups-stews\/mexican-black-bean-corn-soup\/\"><u>Forks Over Knives<\/u><\/a><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 large onion, diced\n<li>6 garlic cloves, minced\n<li>3 stalks celery, diced\n<li>2 carrots, diced\n<li>5 cups vegetable broth\n<li>Four 15 oz cans of black beans (or 7 cups cooked) undrained\n<li>One 15 oz can of whole sweet corn, drained\n<li>One 14.5 oz can of fire roasted tomatoes, diced\n<li>4 tsp roasted cumin (or regular cumin)\n<li>1 to 1 &#038; 1\/2 tsp chipotle chili powder\n<li>1\/2 tsp Herbamare or salt (to taste)\n<li>Juice of 1 small lime\n<li>Fresh ground pepper to taste\n<li>1\/2 bunch of cilantro, chopped to garnish\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>In a large pot, saut\u00e9 the onion, celery, carrots &#038; garlic in 1 cup of vegetable broth over medium heat for 6 to 7 minutes.<br \/>\nAdd chipotle chili powder, roasted cumin &#038; black pepper and cook for another minute or two.<br \/>\nStir in the remaining vegetable broth, 4 cups (or 2.5 cans) of beans, and sweet corn.<br \/>\nTurn to high heat and bring to a boil.<\/p>\n<li>*Add remaining 3 cups (or 1.5 cans) of beans and crushed tomatoes to a blender and process until smooth.<br \/>\nStir into soup when boiling, reduce heat to medium, and simmer for 15 minutes until beans and vegetables are done to your desired tenderness.<br \/>\nTaste test.
