Place water &#038; Kelp\/Kombu in a stock pot.<\/p>\n<p>2. Turn the heat to medium\/low and slowly bring to almost boil, about 10 min.<\/p>\n<p>3. Keep it on a low simmer for about 20 min.<\/p>\n<p>4. After Kelp is cooked, remove it from stock.<\/p>\n<p>5. Bring stock to a boil &#038; add the Bonito flakes. Turn the heat off. Do not stir, wait until all Bonito flakes sink to the bottom.<\/p>\n<p>6. Drain carefully with a sieve lined with gauze or cheese cloth.<\/p>\n<p>If not using right away, store in a jar.
